**For the Crust:**

– 4 large eggs

**1. Preheat your oven:**

Preheat your oven to 325°F (160°C). Put the rack in the middle of this oven.

**2. Prepare the Crust:**
– In a medium bowl or container, make a combination of sugar, melted butter, and graham cracker crumbs,
– Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form an even crust. To do this you can use your hand or the back of a spoon

– Refrigerate the pan while you prepare the filling

**3. Make the Filling:**
– In a large mixing bowl, combine the ricotta cheese, cream cheese, and sugar. Mix until smooth and well combined.
– Add the eggs one at a time, and mix well after each addition
– Stir in the vanilla extract, lemon zest, flour, and salt. Mix until everything is blended well and the batter is smooth

**4. Assemble and Bake:**
– Remove the crust from the refrigerator.
-Place the cheesecake filling over the previously prepared crust.
Press the pan gently on the counter to release any air bubbles

– Place the springform pan on a baking sheet (to catch any potential drips) and bake in the preheated oven for 45-55 minutes, or until the edges are set, and the center is slightly jiggly.
– Turn off the oven, crack the oven door, and let the cheesecake cool inside the oven for about 1 hour.

**5. Chill:**
– After cooling in the oven, remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight to fully set.

**6. Serve:**
– Before serving, you can add a topping of fresh berries, fruit preserves, or a fruit compote if desired.
– Release the cheesecake from the springform pan, slice, and enjoy!
