Making Italian gelato at home can be a delightful experience. Gelato is a frozen dessert that is somewhat similar to ice cream but has a creamier and denser texture. Here’s a basic recipe for making traditional vanilla gelato without using wine or alcohol. Feel free to add your favorite mix-ins or flavors:

Ingredients:

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Base:
    • In a saucepan, combine the whole milk and heavy cream. Heat the mixture over medium heat until it begins to steam, but not boil.
  2. Combine Sugar and Salt:
    • In a separate bowl, whisk together the granulated sugar and a pinch of salt.
  3. Mix Sugar into Milk Mixture:
    • Slowly add the sugar mixture to the heated milk and cream, stirring continuously until the sugar is completely dissolved. Keep stirring to avoid scalding the milk.
  4. Infuse with Vanilla:
    • Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.
  5. Refrigerate:
    • Cover the mixture and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the mixture to chill thoroughly.
  6. Churn in Ice Cream Maker:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  7. Transfer to Freezer:
    • Transfer the churned gelato to a lidded container and freeze for an additional 3-4 hours or until firm.
  8. Serve and Enjoy:
    • Scoop the gelato into bowls or cones, and enjoy your homemade Italian gelato!

Tips:

  • To make other flavors, you can experiment by adding ingredients like chocolate chips, fruit purees, or crushed nuts during the churning process.
  • If you want to avoid alcohol, make sure any flavorings or extracts you use are alcohol-free.

Feel free to get creative with your gelato by incorporating your favorite flavors or mix-ins. If you have any dietary restrictions or specific preferences, you can adjust the ingredients accordingly.
