How to Make Italian Dessert Struffoli at Home?

Struffoli is an excellent Italian dessert. Here’s a traditional recipe for making Struffoli at home:

Ingredients for Struffoli:

  • 3 cups all-purpose flour
  • 4 large eggs
  • 1/4 cup granulated sugar
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1/4 cup unsalted butter, melted
  • Vegetable oil for frying

For the honey syrup:

  • 1 cup honey
  • 1/2 cup granulated sugar
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1/4 cup water
  • Candied fruit or sprinkles for decoration (optional)

Instructions for Struffoli:

  1. Make the dough:
    • In a large mixing bowl, combine the flour, eggs, granulated sugar, lemon zest, orange zest, and melted butter.
    • Mix until the dough comes together. You may need to add a little more flour if the dough is too sticky.
    • Knead the dough on a floured surface until it becomes smooth and elastic, about 5-7 minutes.
    • Shape the dough into a ball, cover it with plastic wrap, and let it rest for about 30 minutes.
  2. Shape the struffoli:
    • Divide the dough into smaller portions and roll each portion into long ropes about 1/2 inch in diameter.
    • Cut the ropes into small pieces, about 1/2 inch in length.
    • Roll each small piece between your palms to form small balls. You can also shape them into small ovals if you prefer.
  3. Fry the struffoli:
    • Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).
    • Fry the struffoli in batches until they are golden brown and crispy, about 2-3 minutes per batch.
    • Use a slotted spoon to transfer the fried struffoli to a paper towel-lined plate to drain excess oil.
  4. Make the honey syrup:
    • In a saucepan, combine the honey, granulated sugar, lemon zest, orange zest, and water.
    • Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is smooth.
    • Bring the mixture to a simmer and cook for another 2-3 minutes until it thickens slightly.
  5. Coat the struffoli:
    • Transfer the fried struffoli to a large mixing bowl.
    • Pour the warm honey syrup over the struffoli and toss gently to coat them evenly.
    • If desired, add candied fruit or sprinkles for decoration.
  6. Serve:
    • Arrange the coated struffoli on a serving platter or plate.
    • Allow them to cool slightly before serving. They can be served warm or at room temperature.
